Chicken & Dumplings - without the Chicken!

Vegetarian Meals
As I stated in a previous post, my daughter has decided not to eat meat. I hesitate to call her a vegetarian, because she really doesn't like vegetables much. I'm trying, therefore, to find foods she likes, that don't contain meat.
One of her favorite meals has always been chicken & dumplings, a southern tradition. Picking out the chicken is a bit difficult, though. So, I discovered a vegetarian option for her. It's not quite as tasty, but it's pretty good, and really simple to make.
Veggie Dumplings
1 can vegetable broth
1 cup flour
olive oil
water
salt
pepper
Pour the vegetable broth into a small saucepan. Add one can of water, and about 2 tablespoons of olive oil. Let this come to a boil while making the dumplings.
In a mixing bowl, combine 1 cup flour, salt, pepper, and enough water to make a thick dough.
On floured board, roll or pat dough to about 1/4" thickness. Use a pizza-cutter to cut into strips, then squares (they don't have to be perfect - just about 1" x 1"). Drop dough sqares into bowling broth and let cook about 10 minutes.
NOTE: the same method could be used with noodles to make noodle soup.
