I have written before about all the health benefits of eating oatmeal. The trouble is, I just really do not like oatmeal. I guess it is the lumps. I've recently discovered oat bran cereal. You make it in a similar way to oatmeal, but it isn't all lumpy and thick. It has the same texture as cream of wheat - which I love, by the way. So now, to get all the same health benefits, I can eat the bran cereal - with the texture I love - and skip that nasty, lumpy oatmeal. If you like the creamier texture - as in cream of wheat or grits - then give oat bran a try. Your heart will love you for it!

Healthy Eating: Easy Italian Chicken

Easy Italian Chicken

This is a simple recipe for baked chicken, using packaged Italian dressing mix for seasoning

Six Servings:

6 small skinless, boneless chicken breasts
1 pkg. Italian dressing mix
1 tablespoon extra-virgin olive oil
2 tablespoons water

Arrange the chicken breasts in a baking dish. Mix the dressing mix, olive oil, and water in a small bowl. Pour the dressing mixture over the chicken. Cover with aluminum foil and bake in a pre-heated 350 degree oven for about 45 minutes.

I don't have calorie/fat information for this recipe, but the dressing mixture doesn't add much fat. I use extra-virgin olive oil because it is healthier than other fats.


Serve with a salad and some steamed vegetables for a healthy dinner.
