Vegetarian - who doesn't like vegetables

My daughter (she's 12) has decided to become a vegetarian. The problem is, she doesn't like vegetables!
Her reason for this decision is the cruel treatment of animals raised for food. She opposes chickens being kept in small cages, and "tricked" into laying eggs more frequently than they would naturally. She also opposes cows being kept pregnant to produce milk (though she hasn't completely given up milk or cheese yet), and beef cattle kept in small spaces, fed steroids, etc. to produce more meat.
I'm really OK with this decision, because I know it can be healthier. The problem is, she doesn't really like vegetables. So, she's not really eating a healthier diet, she just isn't eating meat. She eats nuts and beans to get protein (because I insisted that she get some protein) and she eats salad. She's tried a few meat substitutes, like Chik'n Nuggets (made from tofu) and Veggie Burgers, but she's really not that crazy about them either. Otherwise, she still eats a lot of junk food.
I'm trying to get her to try more vegetables. Because, how can you really call yourself a vegetarian if you don't eat vegetables?
Hoping for some ideas. I like that she's taking a stand. I like that she is trying to develop healthier eating habbits. I just really want to be sure that her eating habbits are healthier, and not just eliminating meat from her diet.
